Ingredients

1 cup raw almonds

1 cup raw walnuts

1 cup pecans

1 cup crispy rice cereal

1 cup granola (preferably honey or nut-flavored)

1/2 cup unsweetened coconut flakes

1/2 cup honey

1/4 cup coconut oil (melted)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dried cranberries or raisins

1/2 cup mini chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare Nut Mixture: In a large mixing bowl, combine the raw almonds, walnuts, pecans, crispy rice cereal, granola, and coconut flakes. Mix gently to distribute evenly.

Make the Sweet Binder: In a small saucepan over low heat, combine the honey, melted coconut oil, vanilla extract, and sea salt. Stir until heated through and well combined, but do not boil.

Combine Mixtures: Pour the honey mixture over the nut and cereal mixture. Use a spatula to gently fold and coat all the dry ingredients evenly.

Spread on Baking Sheet: Pour the mixture onto the prepared baking sheet. Spread it out evenly, making sure there are no large clumps.

Bake: Bake in the preheated oven for 15-20 minutes, stirring halfway through, until the mixture turns golden brown and is crunchy. Keep an eye on it to prevent burning.

Cool: Once baked, remove from the oven and allow the trail mix to cool completely on the baking sheet. It will harden as it cools.

Add Dried Fruits & Chocolate: Once completely cooled, add in the dried cranberries or raisins. If desired, sprinkle mini chocolate chips on top for a touch of sweetness.

Store: Transfer the trail mix to an airtight container. It can be stored at room temperature for up to 2 weeks.
