Ingredients

2 cups mixed nuts (almonds, cashews, walnuts, and pecans)

2 tablespoons olive oil

2 tablespoons minced garlic (about 4 cloves)

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat the Air Fryer: Preheat your air fryer to 320°F (160°C).

Prepare the Nut Mixture: In a large mixing bowl, combine the mixed nuts, olive oil, minced garlic, dried rosemary, dried thyme, sea salt, black pepper, and smoked paprika (if using). Toss well until the nuts are evenly coated.

Air Fry the Nuts: Place the nut mixture in the air fryer basket in a single layer. If your air fryer is small, you may need to do this in batches to ensure even cooking.

Cooking Time: Roast the nuts in the air fryer for about 8-10 minutes, shaking the basket halfway through the cooking time to ensure they are evenly roasted.

Check for Doneness: Keep an eye on the nuts as they cook. They should be golden brown and fragrant when done. Depending on the size of your nuts and the air fryer model, you may need to adjust cooking time slightly.

Cool and Garnish: Remove the nuts from the air fryer and let them cool in the bowl. This will help them become even crunchier. Once cooled, sprinkle the fresh chopped parsley on top for a delightful splash of color.

Serve: Serve your crunchy garlic herb roasted nuts as a tasty snack or appetizer, and enjoy with drinks or as a party mix!
