Soak & Rinse: Place the sliced potatoes in a bowl of cold water and let them soak for about 30 minutes. This helps to remove excess starch and ensures the chips are crispy. Drain and rinse the slices thoroughly under cold water.
Season the Potatoes: After rinsing, pat the potato slices dry with a clean kitchen towel or paper towels. In a large bowl, combine the olive oil, minced garlic, sea salt, black pepper, and smoked paprika (if using). Add the potato slices and toss until all slices are evenly coated with the seasoning mixture.
Air Fry: Preheat your air fryer to 375. Arrange the seasoned potato slices in a single layer in the air fryer basket. You may need to do this in batches to avoid overcrowding. Air fry for 10-15 minutes, flipping halfway through, until the chips are golden brown and crispy. Keep a close eye on them as the cooking time may vary based on your air fryer model.
