14 oz firm tofu, pressed and cubed

¼ cup BBQ sauce (your favorite brand)

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 cup corn kernels (canned or frozen)

1 avocado, diced

½ cup black beans, rinsed and drained

¼ cup cilantro, chopped

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tofu: In a large bowl, toss the cubed tofu with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

      Bake the Tofu: Spread the seasoned tofu cubes on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until the tofu is golden and crispy.

        Glaze with BBQ Sauce: In the last 5 minutes of baking, drizzle the BBQ sauce over the tofu and return it to the oven until it's caramelized.

          Assemble the Bowl: In individual serving bowls, start with a base of quinoa. Top with the crispy BBQ tofu, cherry tomatoes, corn, black beans, and diced avocado.
