4 cups green cabbage, finely shredded

2 cups red cabbage, finely shredded

1 cup carrots, grated

1 red bell pepper, thinly sliced

1/2 cup green onions, chopped

1/2 cup fresh cilantro, chopped

1/2 cup roasted peanuts, roughly chopped

1/4 cup sesame seeds, toasted

For the Dressing:

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey (or maple syrup for vegan)

1 tablespoon fresh ginger, grated

1 clove garlic, minced

1 teaspoon Sriracha (optional, for heat)

Instructions
 

Prep the Veggies: In a large mixing bowl, combine the finely shredded green and red cabbage, grated carrots, sliced red bell pepper, chopped green onions, and fresh cilantro. Toss them together gently to mix.

    Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and Sriracha, if using. Adjust the sweetness or heat to your liking.

      Combine & Toss: Pour the dressing over the cabbage mixture. Start by adding half, mixing lightly, and then add more if needed to ensure even coating.

        Add Crunch: Just before serving, fold in the chopped roasted peanuts and toasted sesame seeds for that unmistakable crunch.

          Garnish & Serve: Transfer the salad to a serving platter or bowl. For an extra pop, sprinkle a few extra peanuts and sesame seeds on top. Serve immediately to enjoy the fresh crunch!
