Crockpot Sweet Corn & Ham Chowder

4 cups fresh or frozen sweet corn

2 cups diced cooked ham

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, diced

4 cups chicken or vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent. Stir in the garlic and cook for an additional 1-2 minutes until fragrant.
