1 lb ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) fire-roasted diced tomatoes

1 can (10 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh, frozen, or canned)

1 medium onion, diced

2 cloves garlic, minced

1 cup beef or chicken broth

1 packet taco seasoning

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup Mexican blend cheese

1 cup tortilla strips (store-bought or homemade)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Brown the Meat: In a skillet over medium-high heat, cook the ground beef or turkey until browned. Drain any excess fat and transfer the meat to the crockpot.

    Mix in Vegetables: Add the black beans, kidney beans, fire-roasted diced tomatoes, diced tomatoes with green chilies, corn, diced onion, and minced garlic to the crockpot.
