1 cup sweet potatoes (peeled and cubed)

1 can (14.5 oz) diced tomatoes (with juice)

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

1 tsp salt (or to taste)

½ tsp black pepper (or to taste)

1 cup fresh green beans (trimmed and cut into bite-sized pieces)

1 cup kale or spinach (chopped)

1 tbsp olive oil

1 lemon (juiced, for garnish)

Fresh parsley (chopped, for garnish)
