Crispy Ranch Chicken Tender Wraps

Ingredients
  

1 lb chicken tenders

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

2 tsp ranch seasoning mix (plus extra for seasoning)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt & pepper to taste

Vegetable oil (for frying)

4 large tortillas (flour or whole wheat)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

1/2 cup ranch dressing

Optional: avocado slices for garnish

Instructions
 

Marinate the Chicken:

    In a bowl, combine the buttermilk with 2 tsp of ranch seasoning. Add the chicken tenders and ensure they are fully submerged. Cover and refrigerate for at least 1 hour (or up to overnight for more flavor).

      Prepare the Coating:

        In a shallow dish, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. In another shallow dish, place the panko breadcrumbs.

          Bread the Chicken:

            Remove each chicken tender from the buttermilk, allowing the excess to drip off. Dredge it in the flour mixture, shaking off the excess. Then dip it back into the buttermilk and finally coat it with the panko breadcrumbs, pressing gently to ensure they stick.

              Fry the Chicken:

                Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once hot (about 350°F/175°C), add the breaded chicken tenders in batches, frying until golden brown and crispy on both sides (about 4-5 minutes per side). Use a slotted spoon to transfer them to a plate lined with paper towels to drain any excess oil.

                  Assemble the Wraps:

                    Lay a tortilla flat on a clean surface. Spread 1–2 tablespoons of ranch dressing in the center of the tortilla. Layer on a generous portion of shredded lettuce, sliced tomatoes, crispy chicken tenders, and sprinkle with cheddar cheese.

                      Wrap It Up:

                        Fold the sides of the tortilla over the filling and then roll tightly from the bottom up to form a wrap. Repeat with the remaining tortillas.

                          Optional – Toast the Wraps:

                            For an extra crispy exterior, place the wraps seam-side down in a lightly oiled skillet over medium heat. Cook for about 2 minutes on each side until golden brown and crispy.

                              Serve:
