2 cups mashed potatoes (about 4 medium-sized potatoes)

1 cup shredded pepper jack cheese

1/2 cup breadcrumbs (plus more for coating)

1/4 cup finely chopped green onions

1/4 cup all-purpose flour

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Prepare the Potatoes: Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain well and let them cool slightly before mashing. Aim for a smooth consistency without lumps.

    Mix the Ingredients: In a large mixing bowl, combine the mashed potatoes, shredded pepper jack cheese, breadcrumbs, green onions, flour, beaten egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated and the mixture holds together.

      Shape the Cakes: Scoop about 1/4 cup of the potato mixture and shape it into a patty, about 1/2 inch thick. Repeat with the remaining mixture, placing the formed cakes on a baking sheet lined with parchment paper.
