Crispy Parmesan Crusted Cod

4 cod fillets (approximately 6 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

1/2 cup all-purpose flour

2 large eggs, beaten

1/4 cup mayonnaise

1 tablespoon lemon juice

Olive oil, for frying

Prep the Cod: Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.

    Make the Coating: In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, onion powder, and paprika. Mix well until the ingredients are evenly distributed.

      Prepare the Dredging Station: In three separate shallow dishes, set up your dredging station:

        - First dish: Flour for coating the cod.

          - Second dish: Beaten eggs mixed with mayonnaise and lemon juice.

            - Third dish: The Parmesan breadcrumb mixture.

              Coat the Cod: Take one cod fillet at a time and first dredge it in the flour, shaking off any excess. Then dip it into the egg mixture, ensuring it is fully coated. Finally, press the fillet into the breadcrumb mixture, making sure to cover both sides thoroughly.

                Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium-high heat. You’ll know it’s ready when you drop a few breadcrumbs in and they sizzle immediately.
