4 large carrots, peeled and sliced into thin rounds

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup black beans, drained and rinsed

1 cup diced tomatoes

1 avocado, diced

¼ cup chopped fresh cilantro

½ cup sour cream (or Greek yogurt)

2 tablespoons lime juice

Optional: sliced jalapeños for heat

Preheat the Oven: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.

    Prepare the Carrot Chips:

      - In a mixing bowl, combine the sliced carrots, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until the carrots are evenly coated.

        - Arrange the carrot slices in a single layer on the prepared baking sheets, ensuring they don’t overlap.
