For the Cod:

4 cod fillets (6-8 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper to taste

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil for drizzling

For the Herb Sauce:

1/2 cup Greek yogurt

1/4 cup fresh parsley, finely chopped

2 tbsp fresh dill, finely chopped

1 tbsp lemon juice

1 garlic clove, minced

Salt and black pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking oil.

    Prepare the Breading: In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

      Set Up Breading Station: In a separate bowl, whisk the eggs. Place the flour in another shallow dish.

        Bread the Cod: Pat the cod fillets dry with paper towels. First, dredge each fillet in flour, shaking off any excess. Next, dip it in the beaten egg, allowing any excess liquid to drip off. Finally, coat the fillet in the panko mixture, pressing gently to make sure the crumbs adhere. Repeat with all the fillets.

          Bake the Cod: Place the breaded cod fillets on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with olive oil. Bake for 15-20 minutes, or until the cod is golden brown, crispy, and flakes easily with a fork.
