Ingredients

1 large head of cauliflower, cut into florets

1 cup cornmeal

1/2 cup nutritional yeast

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup almond milk (or any plant-based milk)

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Jalapeño slices (optional, for serving)

Your favorite salsa (for dipping)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil until they are evenly coated. This will help the seasoning adhere and give them a crispier texture.

Make the Cheese Mix: In a separate bowl, combine the cornmeal, nutritional yeast, smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix well to create your nacho cheese coating.

Coat the Cauliflower: Dip each cauliflower floret into the almond milk, allowing any excess to drip off. Then, roll it in the cornmeal mix until fully coated. Make sure to press the coating onto the florets to ensure it sticks well.

Arrange for Baking: Place the coated cauliflower florets in a single layer on the prepared baking sheet. Be sure not to overcrowd them, as this will prevent them from getting crispy.

Bake to Perfection: Bake in the preheated oven for 25-30 minutes, flipping the florets halfway through, until they are golden brown and crispy.

Serve with Flair: Once done, remove from the oven and let them cool for a couple of minutes. Garnish with fresh cilantro and serve them with jalapeño slices and your favorite salsa for dipping.
