4 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

2 tablespoons fresh parsley, chopped (for garnish)

¼ cup grated Parmesan cheese (optional, for extra flavor)

Prep the Potatoes: In a large bowl, toss the potato wedges with 2 tablespoons of olive oil. Add garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, salt, and pepper. Mix well to ensure every wedge is evenly coated.

    Preheat the Skillet: Heat a large cast-iron skillet over medium-high heat. Once hot, add the remaining 2 tablespoons of olive oil, swirling to coat the bottom of the skillet.

      Cook the Wedges: Carefully place the potato wedges cut side down in the skillet in a single layer. Avoid overcrowding; you may need to cook them in batches. Sauté for about 5-7 minutes until the undersides are golden brown and crispy.

        Flip and Continue Cooking: Using tongs, carefully flip each wedge to the other side. Lower the heat to medium and continue to cook for another 5-7 minutes. If using Parmesan cheese, sprinkle it over the wedges about 2 minutes before they finish cooking to let it melt slightly.
