Start by peeling the sweet potatoes and cutting them into evenly sized fries, about 0.25 inch thick. This ensures even cooking.
In a large mixing bowl, combine the sweet potato fries with olive oil, paprika, garlic powder, sea salt, black pepper, and cayenne pepper (if using). Toss until the fries are well coated.
Preheat your air fryer to 375 for about 5 minutes while you prepare the dip.
Place the seasoned sweet potato fries in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer. Air fry for 15-20 minutes, shaking the basket halfway through, until the fries are golden brown and crispy.
While the fries are cooking, prepare the herb dip. In a small bowl, mix together Greek yogurt, mayonnaise, lemon juice, and Dijon mustard. Stir in the chopped dill and chives, and season with salt and pepper to taste.
Once the fries are cooked, remove them from the air fryer and garnish with fresh parsley. Serve them hot with the herb dip on the side.
