Ingredients

4 large russet potatoes

1/4 cup olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese

1/4 cup green onions, chopped (for garnish)

Sour cream (for serving)

Instructions

Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly to remove any dirt. Pat them dry with a towel.

Bake the Potatoes: Prick the potatoes multiple times with a fork to allow steam to escape. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a knife. Remove from the oven and allow them to cool slightly.

Slice and Scoop: Once cool enough to handle, cut the potatoes in half lengthwise. Carefully scoop out the insides, leaving about 1/4 inch of potato in the skins to ensure they hold their shape.

Season the Skins: In a small bowl, mix the olive oil, salt, black pepper, garlic powder, and minced garlic. Brush this mixture generously over the potato skins, ensuring you coat them well.

Add the Cheese: Place the seasoned potato skins on a baking sheet, cut side up. Sprinkle the grated Parmesan evenly across the skins, followed by a generous layer of shredded cheddar cheese.

Crisp Them Up: Bake the potato skins in the oven for another 15-20 minutes, or until the cheese is bubbly and starts to brown, and the edges of the skins become crispy.

Garnish and Serve: Remove the potato skins from the oven. Let them cool slightly, then sprinkle with chopped green onions. Serve warm with a side of sour cream for dipping.
