Crispy Falafel Veggie Wrap

For the Falafel:

1 can (15 oz) chickpeas, drained and rinsed

1 small onion, chopped

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

Salt and pepper, to taste

1/2 cup breadcrumbs (or ground oats for a gluten-free option)

Oil for frying (or spray for baking)

For the Wrap:

4 large whole-wheat tortillas or wraps

1 cup lettuce, shredded

1 medium tomato, diced

1 small cucumber, sliced

1/2 cup red bell pepper, sliced

1/4 cup red onion, thinly sliced

For the Tahini Sauce:

1/2 cup tahini

2 tbsp lemon juice

1 clove garlic, minced

Water, to thin

Salt, to taste

Prepare the Falafel Mixture:

    In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until combined but still slightly chunky. Gradually add the breadcrumbs and pulse until the mixture holds together but isn’t too smooth.

      Form the Falafel Balls:

        Using your hands, form the mixture into small balls or patties, about the size of a golf ball. If the mixture is too crumbly, add a little water; if it's too wet, add more breadcrumbs.

          Cook the Falafel:

            For frying: In a large skillet, heat oil over medium-high heat. Fry the falafel for about 3-4 minutes on each side until golden brown. Drain on paper towels.

              For baking: Preheat the oven to 375°F (190°C). Place falafel on a lined baking sheet, spray with oil, and bake for about 20-25 minutes, flipping halfway through, until crispy.

                Make the Tahini Sauce:

                  In a small bowl, mix the tahini, lemon juice, garlic, and salt. Gradually add water until you reach your desired consistency (smooth but thick).

                    Assemble the Wraps:

                      Lay a tortilla flat and spread a generous drizzle of tahini sauce in the center. Add a handful of shredded lettuce, followed by falafel, diced tomato, cucumber slices, bell pepper, and red onion. Drizzle more tahini on top if desired.

                        Wrap and Serve:

                          Fold the sides of the tortilla over the filling, then roll from the bottom up to create a tight wrap. Slice in half and serve with extra tahini sauce on the side.
