Crispy Falafel Stuffed Sweet Potatoes

4 medium sweet potatoes

1 cup canned chickpeas, drained and rinsed

1/2 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 small onion, roughly chopped

3 cloves garlic

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper (or more for extra heat)

1 teaspoon baking powder

1/2 cup all-purpose flour (or gluten-free flour)

Salt and pepper to taste

1/4 cup tahini

2 tablespoons lemon juice

Olive oil for drizzling

Lettuce, for serving

Cherry tomatoes, halved, for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Bake the Sweet Potatoes: Wash and pierce the sweet potatoes with a fork several times. Place them on a baking tray and bake in the preheated oven for about 45-60 minutes, or until they are soft and cooked through.

      Prepare the Falafel Mixture: While the sweet potatoes are baking, prepare the falafel. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne, baking powder, salt, and pepper. Pulse until the mixture is finely chopped but not pureed. If necessary, scrape down the sides to ensure everything is mixed well.

        Form the Falafel Balls: Transfer the falafel mixture to a bowl, add the flour gradually, and mix until the mixture holds together. Form small balls or patties (about the size of a golf ball).

          Fry the Falafel: Heat a generous amount of olive oil in a large skillet over medium heat. Once hot, carefully place the falafel balls into the oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on a paper towel.

            Make the Tahini Dressing: In a small bowl, whisk together the tahini, lemon juice, salt, and a little water to achieve a drizzle-able consistency. Adjust the thickness to your liking with additional water or tahini.

              Stuff the Potatoes: Once the sweet potatoes are done, take them out of the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork.

                Assemble the Dish: Place a few crispy falafel balls inside each sweet potato. Drizzle with tahini dressing, add a handful of lettuce, and use cherry tomatoes for garnish.
