2 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably panko for extra crispiness)

1/2 cup all-purpose flour

1 large egg

1 teaspoon garlic powder

1 teaspoon paprika

Salt and black pepper to taste

1 ripe avocado, sliced

1 cup fresh spinach leaves

1 large tomato, sliced

1/4 cup red onion, thinly sliced

4 large whole wheat or spinach wraps

1/4 cup ranch dressing or your favorite sauce

Prep the Chicken: Begin by patting the chicken breasts dry with paper towels. This helps achieve a crispy texture when cooked. Slice the chicken into thin strips, about 1 inch thick.

    Coat the Chicken: Set up a breading station with three bowls. In the first bowl, mix the flour with garlic powder, paprika, salt, and black pepper. In the second bowl, beat the egg. In the third bowl, place the breadcrumbs.

      Bread the Chicken: Dip each chicken strip first into the flour mixture, shaking off any excess. Next, coat it in the egg, and finally, cover it with the breadcrumbs. Make sure each piece is well-coated for optimal crispiness.

        Cook the Chicken: Heat about 1/4 inch of oil in a large skillet over medium heat. Once hot, carefully add the breaded chicken strips in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Drain on a paper towel-lined plate.
