Crispy Chicken Avocado Rice Wraps

Ingredients
  

2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (optional)

Salt and pepper to taste

1 tablespoon olive oil

1 ripe avocado, sliced

1 cup shredded lettuce (romaine or green leaf)

½ cup cherry tomatoes, halved

¼ cup sliced green onions

4 large rice paper wraps

Soy sauce or tamari for dipping

Instructions
 

Prepare the Chicken:

    - Season the chicken thighs with paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Make sure all pieces are well coated.

      Cook the Chicken:

        - Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken thighs. Cook for about 5-7 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove from heat and let cool slightly, then slice into strips.

          Prepare the Rice Paper Wrappers:

            - Fill a shallow dish with warm water. Dip one rice paper wrap into the water for about 10-15 seconds, or until it becomes pliable but not too soft. Lay it flat on a clean surface.

              Assemble the Wraps:

                - On the lower half of the rice paper wrap, place about ½ cup of cooked jasmine rice, followed by a few strips of crispy chicken, a couple of slices of avocado, shredded lettuce, halved cherry tomatoes, and some green onions.

                  - Be careful not to overfill; you want to be able to roll the wrap easily.

                    Roll the Wraps:

                      - Carefully fold the sides of the rice paper inward over the filling, then roll from the bottom up to create a tight wrap. Ensure the filling is secure within the wrap as you roll. Repeat with the remaining wrappers and filling.

                        Serve:
