Crispy Cauliflower Taco Boats

1 medium head of cauliflower, cut into small florets

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas

1 cup shredded purple cabbage

1 avocado, diced

1 cup cherry tomatoes, halved

½ cup black beans, rinsed and drained

¼ cup fresh cilantro, chopped

½ cup crumbled feta cheese (optional)

Lime wedges for serving

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Cauliflower: In a large bowl, combine the cauliflower florets with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Toss well until the cauliflower is evenly coated.

      Roast Cauliflower: Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, tossing halfway through, until the cauliflower is golden brown and crispy on the edges.

        Warm Tortillas: While the cauliflower is roasting, warm the corn tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or by wrapping them in foil and placing them in the oven for the last few minutes of the cauliflower's cooking time.

          Assemble Taco Boats: Once the cauliflower is done, remove it from the oven. Take each tortilla and gently shape it into a boat. You can do this by pleating the sides and arranging them in a baking dish or on a platter.

            Fill Taco Boats: Load each tortilla with roasted cauliflower, followed by a generous helping of shredded cabbage, diced avocado, halved cherry tomatoes, and black beans.
