1 cup broccoli florets, steamed and chopped

1 cup carrots, grated

1 medium zucchini, grated and excess moisture squeezed out

1 cup cooked quinoa

1/2 cup breadcrumbs (preferably whole grain)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup all-purpose flour (or chickpea flour for gluten-free)

2 eggs, beaten (or flaxseed meal mixed with water for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat for easier cleanup.

    In a large mixing bowl, combine the steamed broccoli, grated carrots, grated zucchini, and cooked quinoa. Mix well until all the veggies are evenly distributed.

      Add the breadcrumbs, Parmesan cheese, all-purpose flour, beaten eggs (or flaxseed mixture), garlic powder, onion powder, smoked paprika, salt, and pepper to the veggie mixture. Stir until everything is well combined and forms a slightly sticky mixture.

        Using your hands, form small nuggets (about 1-2 inches in size) from the mixture, pressing them firmly to hold their shape. Place them on the prepared baking sheet, making sure to leave some space between each nugget.

          Lightly spray or brush the tops of the nuggets with cooking spray or olive oil to encourage browning and crispiness while baking.

            Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the nuggets are golden brown and crispy on the outside.
