Crispy Baked Parmesan Zucchini Fries

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and black pepper to taste

2 large eggs

Cooking spray or olive oil for drizzling

Fresh parsley, chopped (for garnish, optional)

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the zucchinis: Wash the zucchinis and cut off the ends. Slice each zucchini into fries, about 1/4 inch thick. You may choose to slice them into sticks or rounds, depending on your preference.

      Create the breading stations: In one shallow bowl, whisk together the eggs. In another bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, smoked paprika, salt, and black pepper.

        Bread the zucchini fries: Dip each zucchini fry first into the egg mixture, allowing the excess to drip off. Then, coat it with the Parmesan-breadcrumb mixture, pressing gently to ensure it's well coated. Place the coated fries on the prepared baking sheet in a single layer.

          Add oil: Lightly spray the tops of the zucchini fries with cooking spray or drizzle a little olive oil over them for extra crispness.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the fries are golden brown and crispy. Flip them halfway through the cooking time to ensure even crispiness.

              Serve: Once done, remove the fries from the oven and allow them to cool for a couple of minutes. Garnish with fresh parsley if desired and serve immediately with your favorite dipping sauce, such as marinara or ranch.
