Crispy Bacon & Egg Breakfast Grilled Cheese

Ingredients
  

4 slices of sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy cooked bacon

2 large eggs

2 tablespoons of unsalted butter, softened

Salt and pepper, to taste

A dash of hot sauce (optional)

Fresh chives, chopped, for garnish (optional)

Instructions
 

Prepare the Bacon and Eggs:

    - Cook the bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain.

      - In the same skillet, crack the eggs and cook sunny-side up or to your preferred doneness. Season with salt and pepper. If you like a bit of heat, sprinkle with a dash of hot sauce.

        Assemble the Sandwich:

          - Spread softened butter on one side of each slice of sourdough bread.

            - On the unbuttered side of two slices, layer two slices of cheddar cheese, followed by two slices of crispy bacon, and finally, the cooked eggs. Add the second layer of cheddar cheese on top before closing the sandwich with the remaining slices of bread, buttered side out.

              Grill the Sandwich:

                - Heat a skillet over medium heat. Place the assembled sandwich in the skillet and cook for about 3-4 minutes, or until the bread is golden brown and crispy. Carefully flip the sandwich and continue grilling for another 3-4 minutes until the cheese is melted and the other side is also golden brown.

                  Serve:

                    - Remove the sandwich from the skillet and let it cool for a minute. Slice it in half to showcase the gooey egg and melted cheese. Garnish with chopped chives, if desired, and serve hot.
