Prep the Zucchini: Start by washing the zucchinis thoroughly. Slice them into thin rounds, about 1/4 inch thick. If you prefer a more uniform texture, you can use a mandoline slicer.

    Prepare the Coating: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all dry ingredients are evenly distributed.

      Prepare the Egg Wash: In another shallow bowl, beat the eggs (or applesauce). This will be used to help the breadcrumb mixture stick to the zucchini slices.

        Coat the Zucchini Slices: Dip each zucchini slice into the egg wash, ensuring it is fully coated, then transfer it to the breadcrumb mixture. Press gently to ensure the crumbs adhere well to each slice. Repeat this process until all zucchini slices are coated.
