Ingredients

1 pound ground beef (or chicken/turkey)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup sour cream

12 small flour tortillas

Cooking spray or olive oil for air frying

Optional toppings: diced avocados, salsa, jalapeños, and fresh cilantro

Instructions

Cook the Meat: In a large skillet over medium heat, add the ground beef (or chicken/turkey) and cook until browned. Drain excess grease if necessary. Add the chopped onion and minced garlic, cooking until the onion is translucent.

Season: Stir in the taco seasoning and a splash of water (about 2-3 tablespoons). Cook for another 3-5 minutes until the mixture is well combined and heated through. Remove from heat.

Assemble the Taco Rolls: Lay a tortilla flat on a clean surface. Place a spoonful of the meat mixture in the center, then top with a sprinkle of shredded cheddar cheese, some shredded lettuce, and diced tomatoes. Add a small dollop of sour cream.

Roll Them Up: Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top, making sure the filling stays inside.

Prepare for Air Frying: Preheat your air fryer to 370°F (188°C) for about 5 minutes. Lightly spray each taco roll on all sides with cooking spray or brush with olive oil, which helps achieve that crispy texture.

Air Fry the Taco Rolls: Place the filled and rolled tortillas seam-side down in the air fryer basket. Make sure not to overcrowd the basket; you may need to cook in batches. Air fry for 8-10 minutes, turning halfway through, until golden brown and crispy.

Serve and Enjoy: Remove the taco rolls from the air fryer and let them cool for a minute. Serve with your choice of toppings such as diced avocados, salsa, jalapeños, and fresh cilantro. Enjoy your crispy air-fryer taco rolls!
