Preheat the air fryer: Set your air fryer to 400°F (200°C) and allow it to preheat for about 5 minutes.
Prepare the sweet potatoes: Scrub the sweet potatoes clean and pat them dry. Using a fork, poke several holes in each sweet potato to allow steam to escape.
Cook the sweet potatoes: Place the sweet potatoes in the air fryer basket and cook for 25-30 minutes, turning them halfway through until they are tender when pierced with a fork.
Make the filling: While the sweet potatoes cook, in a medium bowl, combine chopped pecans, melted coconut oil, maple syrup, ground cinnamon, nutmeg, and salt. Mix until evenly coated.
Cut and scoop: Once the sweet potatoes are cooked, carefully remove them from the air fryer and allow them to cool for a few minutes. Cut each sweet potato in half lengthwise and scoop out a portion of the flesh into a bowl, leaving a small border to maintain the boat shape.
Mix the filling: To the scooped sweet potato flesh, add half of the pecan mixture (reserving the other half for topping) and mix until well combined, creating a creamy, sweet filling.
Stuff the sweet potatoes: Spoon the sweet potato mixture back into the hollowed-out sweet potato halves.
Top and air fry again: Sprinkle the reserved pecan mixture on top of each stuffed sweet potato. If desired, add mini marshmallows for an ooey-gooey topping.
Final air fry: Place the stuffed sweet potato boats back into the air fryer basket and air fry for an additional 5-7 minutes, or until the tops are golden brown and the marshmallows are lightly toasted.
Serve and garnish: Carefully remove the sweet potato boats from the air fryer. Garnish with fresh parsley or cilantro before serving. Enjoy your deliciously sweet, crunchy, and satisfying dish!
