Creamy Zucchini Soup

4 medium zucchinis, chopped

1 medium onion, diced

3 cloves garlic, minced

1 medium potato, peeled and diced

4 cups vegetable broth

1 cup heavy cream or coconut cream (for a vegan option)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried thyme

1 teaspoon lemon juice

Fresh chives (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until they become translucent.

    Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Vegetables: Add the chopped zucchinis and diced potato to the pot. Cook for about 5-7 minutes, stirring occasionally, until the zucchini begins to soften.

        Pour in the Broth: Add the vegetable broth, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, until the zucchini and potato are tender.

          Blend the Soup: Remove the pot from heat. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a regular blender (be careful when blending hot liquids!).

            Stir in the Cream: After blending, return the pot to low heat and stir in the heavy cream or coconut cream. Adjust the seasoning with more salt, pepper, or lemon juice if needed. Let it heat through for about 5 more minutes.

              Serve: Ladle the soup into bowls and garnish with freshly chopped chives.
