Creamy Vegan Mushroom Sauce Pasta

8 oz (225g) whole grain pasta (spaghetti or fettuccine)

2 cups mushrooms, sliced (cremini or button)

1 cup unsweetened plant-based milk (almond or cashew)

1 cup vegetable broth

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

2 tablespoons nutritional yeast

1 tablespoon soy sauce or tamari

1 tablespoon cornstarch (optional, for thicker sauce)

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Prepare the Mushrooms: Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are softened and have released their juices.

        Make the Sauce: Reduce the heat to low. Pour in the vegetable broth and plant-based milk. Stir in the nutritional yeast, soy sauce, thyme, rosemary, salt, and pepper. If you prefer a thicker sauce, mix the cornstarch with a little bit of water to create a slurry, then add it to the skillet while stirring continuously.

          Combine Pasta and Sauce: Allow the sauce to simmer for 5 minutes to thicken. If it becomes too thick, add the reserved pasta water a little at a time until you reach your desired consistency. Add the cooked pasta to the skillet and toss to coat evenly in the sauce.

            Serve: Once combined, remove from heat. Taste and adjust seasoning if needed. Serve warm, garnished with fresh chopped parsley.
