2 cups elbow macaroni (or gluten-free pasta)

1 cup raw cashews (soaked in water for at least 4 hours)

1 cup unsweetened almond milk (or any plant-based milk of your choice)

1/4 cup nutritional yeast

2 tablespoons lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon turmeric powder (for color)

Salt and pepper to taste

1/4 teaspoon cayenne pepper (optional for a kick)

Fresh parsley or chives for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil, and add a pinch of salt. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a high-speed blender or food processor, combine the soaked cashews, almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, smoked paprika, turmeric powder, salt, pepper, and cayenne pepper (if using). Blend on high until the mixture is completely smooth and creamy. If the sauce is too thick, add a bit more almond milk to reach your desired consistency.
