Creamy Turkey Stuffed Peppers

4 large bell peppers (any color)

1 lb ground turkey

1 cup cooked rice (brown or white)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup diced tomatoes (canned or fresh)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. You can save the tops to chop and add to the filling for more flavor if desired.

      Cook the Turkey Mixture: In a large skillet, sauté the chopped onion and minced garlic over medium heat until softened, about 3-4 minutes. Add the ground turkey, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.

        Mix Ingredients: Once the turkey is cooked, reduce the heat to low and stir in the cooked rice, cream cheese, mozzarella cheese, diced tomatoes, Italian herbs, paprika, salt, and black pepper. Mix until fully combined and creamy.

          Stuff the Peppers: Spoon the creamy turkey mixture into each prepared bell pepper, packing it down gently. Place the stuffed peppers upright in a baking dish.

            Bake the Peppers: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

              Garnish and Serve: Once done, remove the peppers from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving.
