Creamy Tomato Spinach Pasta

12 oz pasta of your choice (fettucine or penne work great)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes with basil, garlic, and oregano

1 cup heavy cream

4 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese (plus more for serving)

1 tablespoon fresh basil, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant.

      Add Tomatoes: Pour in the canned diced tomatoes (with juices) and bring to a simmer. Let it cook for about 5 minutes, stirring occasionally.

        Cream It Up: Reduce the heat to low, then add the heavy cream to the skillet. Stir well to combine and create a creamy sauce. Add the Italian seasoning and season with salt and pepper to taste.

          Incorporate Spinach: Gradually add the chopped spinach into the sauce, stirring until wilted and well combined, about 2-3 minutes.

            Combine with Pasta: Add the drained pasta to the skillet and toss to combine. If the sauce appears too thick, gradually add reserved pasta water until the desired consistency is reached.
