Creamy Tomato Basil Quinoa Bake

1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 can (15 oz) crushed tomatoes

1 cup heavy cream (or coconut cream for a dairy-free option)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup fresh basil leaves, chopped

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded mozzarella cheese (or vegan cheese, if preferred)

½ cup grated Parmesan cheese (or nutritional yeast for a dairy-free option)

Olive oil for sautéing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium heat, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and set aside.

      Sauté Aromatics: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, crushed tomatoes, heavy cream, sautéed onion and garlic, chopped basil, dried oregano, salt, and black pepper. Stir until everything is well mixed.

          Add Cheese: Stir in half of the mozzarella and half of the Parmesan (or their dairy-free alternatives) into the quinoa mixture, folding gently to incorporate.

            Transfer to Baking Dish: Pour the creamy quinoa mixture into a greased 9x13-inch baking dish, spreading it out evenly.

              Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheeses on top of the quinoa mixture.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                  Garnish and Serve: Once baked, remove from the oven and let it cool for 5 minutes. Garnish with additional fresh basil before serving.
