4 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 can (15 oz) crushed tomatoes

½ cup chicken broth

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

½ cup grated Parmesan cheese

1 cup fresh basil leaves, roughly chopped

Zest and juice of 1 lemon

Instructions
 

Prep the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear them for about 5-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant, making sure not to burn it.

        Add the Tomatoes and Broth: Pour in the crushed tomatoes and chicken broth, scraping up any brown bits stuck to the bottom of the pan. Bring to a simmer.

          Create the Creamy Sauce: Stir in the heavy cream, dried oregano, and red pepper flakes (if using). Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.

            Combine Chicken and Season: Return the seared chicken breasts to the skillet. Cover them with the creamy tomato sauce and sprinkle the grated Parmesan cheese over the top. Let everything simmer together for another 5 minutes.

              Finish with Basil and Lemon: Stir in the fresh basil leaves, lemon zest, and juice. Adjust seasoning with more salt and pepper if needed.

                Serve: Garnish with additional basil, and serve hot over a bed of pasta, rice, or alongside crusty bread to soak up that delicious sauce!
