Creamy Tomato Basil Chicken and Zucchini

4 boneless, skinless chicken breasts

2 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup fresh basil leaves, chopped

Grated Parmesan cheese, for garnish (optional)

Prepare the Chicken: Season the chicken breasts with salt, pepper, and smoked paprika. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and sear for about 5-7 minutes on each side, or until golden brown and cooked through. Once cooked, remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant. Then, add in the sliced zucchini and cherry tomatoes. Sauté for 3-4 minutes until the vegetables begin to soften.

      Make the Creamy Sauce: Pour in the chicken broth and bring to a simmer. Then, stir in the heavy cream and Italian seasoning. Let it simmer for about 5 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

        Combine Ingredients: Return the cooked chicken to the skillet. Add in the fresh spinach and chopped basil, stirring gently until the spinach wilts and everything is well coated in the creamy sauce. Adjust taste with additional salt and pepper if needed.
