Creamy Tomato Avocado Pasta

8 oz (225g) pasta of your choice (fettuccine or penne work well)

2 ripe avocados, halved and pitted

1 cup cherry tomatoes, halved

2-3 cloves garlic, minced

1/2 cup heavy cream or coconut cream for a dairy-free option

1/4 cup fresh basil leaves, chopped, plus extra for garnish

2 tbsp olive oil

1 tbsp lemon juice

Salt and pepper to taste

Grated Parmesan cheese or nutritional yeast for a vegan option (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Creamy Sauce: In a blender, combine the avocados, minced garlic, heavy cream (or coconut cream), lemon juice, olive oil, fresh basil, and a pinch of salt and pepper. Blend until smooth and creamy. If the mixture is too thick, add a little reserved pasta water to achieve your desired consistency.

      Sauté the Tomatoes: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the halved cherry tomatoes and sauté for about 3-4 minutes until they start to soften and blister. Remove from heat.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the sautéed tomatoes. Pour the creamy avocado sauce over the pasta, tossing everything together until well coated. If needed, add more pasta water to help loosen the sauce.

          Taste and Adjust: Season with additional salt and pepper to taste. If desired, stir in grated Parmesan cheese or nutritional yeast for extra flavor.
