Ingredients
  

2 ripe avocados, peeled and pitted

1 large cucumber, peeled and chopped

1 cup Greek yogurt

1 cup vegetable broth (chilled)

1/4 cup fresh lime juice (about 2 limes)

1/2 cup fresh basil leaves, plus extra for garnish

1 clove garlic, minced

Salt and pepper to taste

1 tablespoon olive oil

Optional: 1 jalapeño, seeds removed and finely chopped for heat

Instructions
 

Blend the Base: In a blender, add the avocados, chopped cucumber, Greek yogurt, and chilled vegetable broth. Blend until the mixture is creamy and smooth. You may need to add more broth if it’s too thick for your liking.

    Add Flavor: Zest the limes and then add the juice, fresh basil leaves, minced garlic, and jalapeño (if using) to the blender. Blend again until everything is well incorporated.

      Season: Taste the soup and season with salt and pepper according to your preference. Blend once more to combine.

        Chill: Transfer the soup to a large bowl or container and cover. Refrigerate for at least 1 hour to let the flavors meld and to serve it cold.
