Creamy Spinach Pasta Alfredo

12 oz fettuccine pasta

2 cups fresh spinach, chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Pinch of red pepper flakes (optional)

Fresh basil for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.

      Make the Alfredo Sauce: Lower the heat, and pour the heavy cream into the skillet with the spinach. Stir gently and let it simmer for 2-3 minutes. Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add some reserved pasta water, one tablespoon at a time, until you reach your desired consistency.

        Combine Pasta and Sauce: Add the drained fettuccine to the skillet with the sauce. Toss to coat the pasta evenly. Add the Italian seasoning, red pepper flakes (if using), and season to taste with additional salt and pepper.

          Serve: Garnish with fresh basil if desired. Serve immediately while hot, with extra Parmesan cheese on the side.
