8 oz (225g) pasta (fettuccine or penne)

1 tablespoon olive oil

3 cloves garlic, minced

1 cup fresh spinach, roughly chopped

1 cup canned artichoke hearts, drained and quartered

1 cup cream cheese, softened

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining the pasta.

    Sauté Veggies: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Stir in the chopped spinach and artichoke hearts, cooking for an additional 2-3 minutes until the spinach is wilted.

      Make the Creamy Sauce: Lower the heat and add the softened cream cheese to the skillet, stirring until melted and combined with the veggies. Gradually pour in the heavy cream, stirring well to create a smooth sauce.
