Creamy Spinach and Turkey Stuffed Shells

20 jumbo pasta shells

1 lb ground turkey

1 tablespoon olive oil

3 cloves garlic, minced

1 onion, finely chopped

1 teaspoon dried Italian herbs

1/2 teaspoon red pepper flakes (optional)

10 oz frozen spinach, thawed and drained

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cups marinara sauce

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, ground turkey, Italian herbs, and red pepper flakes (if using). Cook until the turkey is browned and fully cooked, breaking it apart with a spoon, about 6-8 minutes. Season with salt and pepper to taste.

      Combine with Spinach: Lower the heat and stir in the thawed spinach, followed by the ricotta, half of the mozzarella cheese, and the Parmesan cheese. Once combined, remove from heat and let the mixture cool slightly. Stir in the beaten egg to bind the filling.

        Fill the Shells: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 baking dish. Using a spoon, carefully fill each cooked shell with the turkey and spinach mixture. Place the stuffed shells open-side up in the baking dish.

          Top with Sauce and Cheese: Once all shells are filled, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese over the sauce.

            Bake: Cover the dish with aluminum foil (to prevent sticking, spray the foil with cooking spray if necessary) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and lightly golden.
