Creamy Spinach and Mushroom Stuffed Chicken

Ingredients
  

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup cremini mushrooms, diced

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling:

      - In a large skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant.

        - Add the chopped mushrooms and cook until they're tender, about 5-7 minutes.

          - Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Remove from heat.

            - In a mixing bowl, combine the cooked mushroom and spinach mixture with cream cheese, Parmesan cheese, mozzarella cheese, oregano, salt, pepper, and red pepper flakes (if using). Mix until well combined.

              Stuff the Chicken:

                - Carefully cut a pocket into the side of each chicken breast, ensuring you don’t cut all the way through.

                  - Spoon the creamy spinach and mushroom filling into each chicken breast pocket, pressing down gently to pack it in.

                    Sear the Chicken:

                      - In the same skillet, add a bit more olive oil and heat over medium-high.

                        - Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.

                          Bake the Chicken:

                            - Once seared, transfer the chicken breasts to a baking dish.

                              - Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F or 75°C).

                                - Remove the foil and bake for an additional 5-10 minutes to lightly brown the top.

                                  Garnish and Serve:

                                    - Remove the chicken from the oven and let it rest for a few minutes.

                                      - Garnish with freshly chopped parsley before serving.
