Creamy Sausage & Pepper Pasta Skillet

8 oz (225g) penne pasta

1 lb (450g) Italian sausage, removed from casings (mild or spicy, based on preference)

1 tablespoon olive oil

1 medium onion, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

3 garlic cloves, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for extra heat)

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

Salt and black pepper, to taste

1 cup (100g) freshly grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.

    Brown the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook, breaking it up with a wooden spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage from the skillet and set aside, leaving the rendered fat in the skillet.

      Sauté Vegetables: Add olive oil to the same skillet. Toss in the sliced onion, red bell pepper, and yellow bell pepper. Sauté for 4-5 minutes, or until the vegetables are tender. Add the minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant.

        Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to simmer for about 3-4 minutes, letting it thicken slightly. If it becomes too thick, add some of the reserved pasta cooking water to reach your desired consistency.

          Combine Everything: Return the browned sausage to the skillet. Add the cooked penne pasta and toss everything together until well combined. Stir in the grated Parmesan cheese, allowing it to melt and infuse the sauce with flavor. Season with salt and black pepper to taste.

            Garnish and Serve: Once everything is combined and heated through, remove from heat. Serve hot in bowls, garnished with fresh basil leaves and an extra sprinkle of Parmesan if desired.
