Creamy Sausage and Potato Casserole

1 lb (450g) Italian sausage, casing removed

4 medium-sized Yukon Gold potatoes, thinly sliced

1 medium onion, diced

3 cloves garlic, minced

2 cups heavy cream

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon paprika

1 cup shredded cheddar cheese

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sausage: In a large skillet over medium heat, add the Italian sausage and cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes. Drain excess grease if necessary.

      Add Aromatics: Add diced onions and minced garlic to the skillet with the sausage. Sauté for another 3-4 minutes until the onions are translucent.

        Prepare the Cream Sauce: In a separate bowl, whisk together heavy cream, chicken broth, thyme, paprika, salt, and pepper.

          Layer the Casserole: In a greased 9x13 inch baking dish, start layering:

            - Half of the sliced potatoes at the bottom.

              - Half of the sausage mixture evenly over the potatoes.

                - Pour half of the cream sauce over this layer.

                  - Repeat the layers with the remaining potatoes, sausage mixture, and finish by pouring the remaining cream sauce on top.

                    Add Cheese: Sprinkle the shredded cheddar and Parmesan cheeses evenly across the top of the casserole.

                      Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes until the top is bubbly and golden.

                        Garnish and Serve: Once baked, let the casserole sit for about 10 minutes to set. Garnish with fresh parsley before serving.
