Creamy Roasted Veggie Casserole

2 cups broccoli florets

2 cups cauliflower florets

2 cups diced carrots

1 red bell pepper, diced

1 medium onion, chopped

4 cloves garlic, minced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup heavy cream

1 cup vegetable broth

1 cup grated Parmesan cheese (divided)

1 cup shredded mozzarella cheese

1 cup breadcrumbs (optional for topping)

Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Vegetables: On a large baking sheet, toss the broccoli, cauliflower, carrots, red bell pepper, onion, and garlic with olive oil, salt, pepper, thyme, and oregano. Spread them out in a single layer. Roast in the preheated oven for about 25-30 minutes, or until tender and slightly charred, stirring halfway through.

      Prepare the Creamy Mixture: In a medium saucepan over medium heat, combine heavy cream and vegetable broth. Stir in half of the grated Parmesan cheese and season with a pinch of salt and pepper. Cook until the cheese is melted and the mixture is creamy.

        Combine Ingredients: In a large mixing bowl, combine the roasted vegetables with the creamy mixture. Add the cherry tomatoes and gently fold everything together until well combined.

          Assemble the Casserole: Transfer the mixture to a greased 9x13 inch casserole dish. Sprinkle the remaining grated Parmesan cheese and shredded mozzarella evenly over the top. If desired, add breadcrumbs for an extra crunchy topping.

            Bake: Place the casserole in the oven and bake for another 20-25 minutes, or until the cheese is bubbly and golden brown.
