Creamy Roasted Tomato Pasta

2 pints cherry tomatoes, halved

4 cloves garlic, unpeeled

3 tbsp olive oil

Salt and freshly ground black pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

12 oz pasta (fettuccine or your preferred type)

1/2 tsp red pepper flakes (optional for spice)

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Roast the Tomatoes:

    Preheat your oven to 400°F (200°C). On a large baking sheet, toss the halved cherry tomatoes and unpeeled garlic cloves with olive oil, salt, and pepper. Spread them out in a single layer and roast in the oven for about 25-30 minutes, until the tomatoes are blistered and caramelized.

      Prepare the Pasta:

        While the tomatoes are roasting, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

          Make the Creamy Sauce:

            Once the tomatoes are done roasting, remove them from the oven. Allow the garlic to cool slightly, then peel and mince it. In a large skillet over medium heat, add the roasted tomatoes (with all their juices), the minced garlic, and the heavy cream. Stir well to combine and let simmer for about 5 minutes.

              Incorporate Cheese:

                Gradually stir in the grated Parmesan cheese until the sauce is creamy and smooth. If you want a little heat, add in the red pepper flakes. If the sauce is too thick, slowly add some reserved pasta water until you reach your desired consistency.

                  Combine Pasta and Sauce:

                    Toss the drained pasta into the creamy tomato sauce, mixing thoroughly to ensure the pasta is evenly coated. If necessary, add more pasta water to maintain a creamy texture.

                      Serve:
