Ingredients

1 pound elbow macaroni

1 head of garlic

2 tablespoons olive oil

2 cups heavy cream

1 cup whole milk

4 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt (to taste)

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional)

Fresh parsley, chopped (for garnish)

Instructions

Roast the garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves and drizzle with olive oil. Wrap it in aluminum foil and roast for 30-35 minutes until soft and caramelized. Let it cool slightly.

Cook the pasta: While the garlic roasts, cook the elbow macaroni in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

Make the cheese sauce: In a large saucepan, combine the heavy cream and whole milk. Heat over medium heat until just simmering. Lower the heat and add the shredded cheddar and grated Parmesan, stirring until melted and smooth.

Add spices: Squeeze the roasted garlic cloves out of their skins into the cheese sauce, using a whisk to incorporate them. Add onion powder, garlic powder, salt, black pepper, and cayenne pepper (if using). Stir until fully blended.

Combine pasta and sauce: Add the cooked macaroni to the cheese sauce, stirring gently to coat the pasta evenly in the creamy mixture.

Serve: Transfer the creamy roasted garlic mac to a large serving dish or individual plates. Garnish with chopped fresh parsley for a burst of color and freshness.

Enjoy: Serve hot and enjoy the creamy richness of this deliciously garlicky mac and cheese!
