Ingredients

1 head of garlic

2 tablespoons olive oil

8 ounces fettuccine pasta

1 cup heavy cream

1 cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Pinch of nutmeg (optional)

Lemon zest (for a fresh finish)

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with 1 tablespoon of olive oil, and wrap in aluminum foil. Roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized. Let cool, then squeeze out the roasted garlic into a small bowl and mash with a fork.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Prepare the Alfredo Sauce: In a large skillet over medium heat, melt the butter. Add the roasted garlic and sauté for about 1 minute, letting its rich aroma fill the kitchen.

Make It Creamy: Pour in the heavy cream, stirring gently. Bring to a gentle simmer, then lower the heat. Whisk in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

Season: Add salt, pepper, and a pinch of nutmeg to taste. Stir in the cooked fettuccine, tossing well to coat the pasta evenly in the creamy sauce.

Serve: Plate the pasta, garnishing with freshly chopped parsley and a sprinkle of lemon zest for a delightful hint of brightness.

Enjoy: Serve immediately, pairing it with garlic bread or a simple green salad for a complete meal.
