1 large head of broccoli, cut into florets

1 medium onion, chopped

2 cloves garlic, minced

3 tablespoons olive oil

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon smoked paprika

1 tablespoon lemon juice

Optional garnish: toasted pine nuts, croutons, or a drizzle of olive oil

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Broccoli: In a large bowl, toss the broccoli florets with 2 tablespoons of olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet. Roast in the oven for 20-25 minutes, or until the edges are crispy and the broccoli is tender.

      Sauté the Aromatics: In a large pot over medium heat, add the remaining 1 tablespoon of olive oil. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and cook for another minute, stirring constantly to prevent burning.

        Combine Ingredients: Once the broccoli is done roasting, add it to the pot with the sautéed onions and garlic. Pour in the vegetable broth and bring the mixture to a simmer. Allow it to simmer for about 10 minutes so the flavors meld together.
