2 medium-sized beets, roasted and peeled

1 can (15 oz) chickpeas, drained and rinsed

¼ cup tahini

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 garlic clove, minced

½ teaspoon ground cumin

Salt and pepper, to taste

2-3 tablespoons water (as needed for desired consistency)

Fresh herbs (like parsley or dill) for garnish

Toasted sesame seeds for garnish (optional)

Instructions
 

Roast the Beets: Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes, or until they are tender when pierced with a fork. Let them cool, then peel off the skins and chop into chunks.

    Blend the Ingredients: In a food processor, combine the roasted beets, chickpeas, tahini, olive oil, lemon juice, minced garlic, and ground cumin. Season with salt and pepper.

      Puree Until Smooth: Pulse the mixture until it is well-combined. Scrape down the sides of the bowl as necessary. If the hummus is too thick, add water one tablespoon at a time until you reach your desired consistency.

        Taste and Adjust: Taste the hummus and adjust the seasoning with more lemon juice, salt, or cumin if desired.
